There is a certain stillness to the northern side of Siargao – one that becomes immediately noticeable upon arrival.

Manding’s Kitchen sits comfortably within that pace. At first glance, it feels almost understated. The space is open, quiet, and unexpectedly empty – but in a way that adds to its charm rather than takes away from it.

Inside, the restaurant is warm and inviting. Soft golden lighting fills the space, reflecting off clean wooden tables and a simple, home-style counter set at the back. Nothing feels overly designed, yet everything feels considered.

But the experience shifts once outside.

Facing the water, the outdoor seating carries a different energy. Even at night, the breeze moves easily through the space, light and consistent. Fairy lights are strung across wooden beams, adding a soft glow without overwhelming the setting. Scattered nearby are low, folding beach chairs – the kind you settle into without thinking, encouraging you to stay longer than planned.

The food follows the same approach as the space: simple, but done well.

The Aglio Olio pasta arrives light and balanced, with just enough olive oil and garlic to hold its flavour without becoming heavy. Parmesan is served alongside, adding flexibility – both to finish the pasta and to repurpose later, even pairing naturally with the crust of a pizza.

The standout, however, is the Nachos Ala Manding. Made with crisp cassava chips instead of the usual tortilla base, the dish is layered with tomato salsa, avocado, beef ragu, and cheese sauce. The combination is rich but not overwhelming, with each element still distinct. It is the kind of dish that feels thought through rather than assembled.

The Kang-Kong pizza – built with water spinach, roasted garlic, sun-dried tomatoes, and ricotta – leans more experimental. The flavours are softer, slightly more subtle, but still cohesive.

Overall, the food holds its own, but it is the atmosphere that defines the experience.

Manding’s Kitchen does not rely on volume or crowd. It offers a space to sit, to eat, and to stay a little longer than intended.

It is the kind of place that does not try too hard, and because of that, works exactly as it should.
